Lunch Lady Land

So most of my friends and family already know that I'm a vegetarian. It all started with this book Skinny Bitch a few girls and I read at work almost 2 years ago. It is a funny approach on all the stuff that people do to animals before we eat them. Not even just animals, but to a lot of non-organic food in general. I liked this book because I didn't feel like it was forcing me to be a vegetarian, but it did have a lot of great ideas! Anyway, long story short ... it's been almost 2 years now and for the most part (minus a few mishaps here and there) I've stuck with it. I still eat fish (meaning I'm a pescatarian) and I eat dairy on occasion, but other than that I don't eat meat (beef, chicken, pork, etc.)

My goal is to start trying to find new recipes for being a vegetarian. One of the vegetarian drawbacks (especially if you're constantly on the go like me) is that you end up eating a lot of the same stuff over and over again. The other day my mom made some DELICIOUS tofu tacos. So this has kind of inspired me to at least look at some new recipes =)
